This offering of Highland Park is a perfect example of one of the finest Single Malt Scotches available; it is a lightly peated, Island Malt, distilled on Orkney, that was munificently rested in Sherry barrels for over 18 years to an astoundingly, gorgeous effect. The aromas begin with light smoke, desiccated fruit, honey, dried heather, tea and cocoa notes that evolve into well-oiled leather, nuts, treacle and elaborate oak spices. The oily, vibrant mouth-feel is chewy with layered flavors that show heather, orange peels, toasted nuts, vivid spices and nougat inside of a vivaciously lingering bouquet. The opulent finish is long and spicy; it delicately restates the complex flavors and hangs around to reveal gracious subtleties with smoke as the grand finally.
