"This Pinot noir is a blend from multiple plots but all on limestone soil, situated in the Markgraeflerland. A major part of the vines is above 40 years and the fruit was fermented as 40% whole cluster in an open top fermenter for 18 days. Ageing during 16 months in mainly used barrels." Vines for Wasenhaus' Kalk Pinot Noir (or as they say in Germany, Spatburgunder) originates from a single new lot in the town of Ebringen, which is located ten minutes north of Wasenhaus. However, the name, which means chalk, expresses what matters most: the soil. I adored the wine; it may be more bouncy, but it has some of the essence of Bellen (Bellen has limestone soils and some of its grapes were used here). We'll see. This Pinot noir is a mix of several plots grown in the Markgraflerland on limestone soil. The fruit was fermented as a 40% whole cluster in an open-top fermenter for eighteen days, and the majority of the vines are older than forty years. 16 months of aging in mostly secondhand barrels.
