In May 2010, this rum was distilled in the historic, double-wooden pot still at the Diamond Distillery then shipped to the UK where it was aged in once-used bourbon barrels. It continued to mature in the UK until it was shipped to the US for bottling in 2021.
Only 233 bottles of this single cask, eleven-year-old, Port Mourant rum were bottled as part of my Single Cask Strength Collection.
The molasses used at Demerara Distillers Ltd comes from Guyana and contained 65% dissolved sugar, one of the highest sugar contents of any molasses found in the Caribbean. The high sugar content is attributed to the age of the Guyanese sugar mill.

Like the other wood stills at Diamond Estate it is made of greenheart wood, which is revered for its durability when exposed to elements such as moisture and heat, not to mention its resistance to rot and insects including termites.
