A medium-deep garnet hue shows off the ripe, rich take that this boutique producer has on the noble Nebbiolo vareity. But the palate shows off the sleek and elegant fruit texture they are able to maintain. Fresh garden rose and woodsy, dark-red fruits saturate, and a supple, but finely-gripping layer of tannins coat the mouth. A pop of hibiscus tea appears on the finish. This is a special Nebbiolo.
Ghiomo picks their grapes a bit late, when extra ripe, then allows the crushed grapes to rest for a day under a protective blanket of carbon dioxide. Fermentations take place in stainless steel, and aging takes place in large, neutral oak casks for a year.
