Prickly pear eau-de-vie produced in Agua Temazcal, Cuicatlán, in the Sierra Norte of Oaxaca Maestro Destilador Rommel Krassel Distilled from 100% tuna (prickly pear) sourced near the distillery in Cuicatlán Fermented in stainless steel for 10–12 days using Champagne yeast Distilled twice in copper alembic pot stills Rested in glass 1 year before bottling Starchy and piquant aromas of taro root, fresh horseradish, jicama, and freshly julienned green apple lead to a high-toned palate of nopales underscored by candied peanuts. Sweet-tart candied hibiscus lands on a delightfully delayed finish. Approximately 200 liters produced each year 42% ABV The prickly pear is known in Mexico as tuna (ahem – be careful not to confuse it with the fish) and is, in fact, the fruit of the paddle cactus (Opuntia ficus-indica). Savory and juicy pink bulbs blossom at the tips of the cactus leaves; the fruit is popularly used in everything from salad to ice cream. Bright and boldly aromatic, Edenico’s prickly pear unquestionably stands out amongst the most unique eau-de-vie in the world.
