Sparkling poiré (pear cider) produced by Frédéric and Catherine Pacory in Mantilly, in the southern part of Normandy in the Domfrontais appellation Made from 100% Plant de Blanc pears; the pears are stocked in wooden boxes for 36 hours after harvest to further mature Naturally fermented for 3 months; after several rackings, the poiré is stored upside down in bottles with crown caps and not disgorged A beguilingly dank nose leads to a creamy palate balanced with relaxed acidity and a touch of green herbs, hay, and yeasty, farmhouse funk. 5% ABV
