Fermentation (& maceration) for 3 weeks. Aged 1 year in 500L barrels and 2 years in bottle before release. 15% abv. The winemakers recommend decanting a couple hours before serving at around 64F, and pairing with grilled meats, especially game like wild boar or venison.
