A honey-anisette liqueur from Casa D'Aristi of Mérida, Yucatán, Mexico — founded in 1935 by Don Carlos Aristi, who at 19 traveled the peninsula researching Mayan culture and discovered the ancestral ceremonial beverage balché, perfecting a recipe to preserve the region's traditions; the family craft liqueur house now marks some 90 years of production. Yucatán honey from Melipona bees and wild green aniseed are fermented with yeast and sugar into a honey-aniseed concentrate, aged about 30 days in old barrels, then blended with a sugarcane-molasses base — a living echo of the sacred Mayan drink.
Nose: Vibrant herbaceous and minty notes of green aniseed.
Palate: Delicate Yucatecan honey and white jungle flowers.
Finish: Mineral notes reminiscent of the cenotes.
