    This Riesling was fermented on the skins and then remained on the skins for ten days of extended maceration. This gave the wine heightened color (orange tones) as well as more of the unique spiciness that Riesling is known for. Bannister put it through full malo-lactic fermentation which gives it increased balance against the intensity of the extracted skin tannins. Early flavor profiles of the Riesling are Quince, Pomello, tart apple, and all spice. It continues to evolve with bottle aging. This Riesling has great food pairing capabilities, especially with spicy dishes, where most wines have limitations.

    Bonterra's organic fruit from Mendocino offers the characteristic flavors of green apples, pears, and citrus to our chardonnay. They ferment 70% of the juice in a combination of French and American oak, which is allowed to undergo malolactic fermentation to create a rich, creamy wine with just a touch of new oak spice. The remaining 30% is fermented in stainless steel to preserve the crisp fresh fruit favors. Bonterra ages most of the wine using previously-used or neutral oak in order for these fresh fruit characteristics to shine through. New oak was used for just 16% of the wine to give this Chardonnay a nice vanilla note. An initial impression of rich, buttery cream quickly turns to aromas of honey and lightly toasted almonds, followed by tropical aromas of pineapple, citrusy lemon and creme brulee. The wine is refreshing on the palate, with a minerality that is both bright and clean, drawing you into a vibrant tartness and lemon zest that is absolutely, positively Bonterra Chardonnay, vintage after vintage.

    Winemaker Erik miller was inspired to begin this new project by an emerging style of California wines that are lighter in alcohol, crunchy in acidity, and bright in appearance. Erik was originally introduced to this style of wine by Cru Beaujolais, and decided to craft their own interpretation of this from two of their favorite varietals, Zinfandel and Grenache. The defining characteristic is whole-cluster fermentation (carbonic maceration), which lends a crunchy, herbaceous character to the wine. The goal is a very hands-off approach to winemaking that highlights the purity of fruit, and deliciousness of a lighter bodied red wine that preferably should be served slightly chilled.

Playing in the medium-bodied end of the spectrum, it has good acidity, plenty of structure, and a great finish, yet its seamless, pure texture is what stands out. My money is on this blossoming with 2-3 years of bottle age, and it's going to drink nicely for a decade. It's impressive."
