ORGANICALLY FARMED
This bottling shows off the character of Pecorino when it's made in classic fashion (rather than some modern juicy & fruity versions). Fermented and aged only in stainless steel, it shows the variety's light gold hue, and traditional savory, nutty, lightly pithy accents to the subtle citrus and stone fruit core. The finish lingers on with spice hints and salinity. A perfect wine for savory dishes of medium-textured fish and roast chicken with herbs and lemon.
"Smells like crushed cardamom and fennel seeds. Intensely citric, stony and herbal, although over a couple of days and when it was a little warmer in the glass, it became creamy, tasting of caramel, apricot and grilled peach. Gentle succulence and a touch of lilac blossom. Rugged texture, like picking thyme from rocks. There’s a salty tang to this wine that proved to be spectacular with capers (I literally tried them, straight from the jar, with the wine) and a paper-thin slice of the most ordinary Parmigiano Reggiano." - Tamlyn Currin, JANCIS ROBINSON
