This bottling shows off the character of Pecorino when it's not made in a more delicate & fruity style. Fermented and aged only in stainless steel, it shows a classic light gold hue, and savory, nutty and lightly pithy accents to the subtle citrus and stone fruit core, which lingers on with spice hints and salinity. A perfect wine for savory dishes of medium-textured fish and roast chicken with herbs and lemon.
"Smells like crushed cardamom and fennel seeds. Intensely citric, stony and herbal, although over a couple of days and when it was a little warmer in the glass, it became creamy, tasting of caramel, apricot and grilled peach. Gentle succulence and a touch of lilac blossom. Rugged texture, like picking thyme from rocks. There’s a salty tang to this wine that proved to be spectacular with capers (I literally tried them, straight from the jar, with the wine) and a paper-thin slice of the most ordinary Parmigiano Reggiano." - Tamlyn Currin, JANCIS ROBINSON
