"L'Ouverture" is 100% Pinot Noir and Savart's entry level Champagne. 85% of the juice comes from the first pressing which they call the "cuvee" while the rest comes from the second pressing, also known as the "first cut". Maturation occurs in stainless-steel vats on thin lees. Malolactic fermentation is allowed and the dosage is 9g/L.
