The latest evolution of Probitas, referenced by its green label, is a blended dark rum with a higher proof, a greater stock of aged rum in the blend, and a higher-ester marque from Hampden Estate. In keeping with a centuries-old practice, caramel coloring produced by heating sugar in-house at the Foursquare distillery is used to color the rum without adding any sweetness.
