Bottled at 46% ABV (92 proof) in a 700ml bottle, this small-batch expression is handcrafted by Maestro Mezcalero Carlos Méndez Blas using traditional Oaxacan production methods. Tepeztate is a wild agave that can take 20 to 25 years to mature, producing a mezcal celebrated for its vibrant herbal character, bright citrus, earthy minerality, and elegant floral complexity. Process & Production Palomo Tepeztate is produced from mature wild Tepeztate agaves, which naturally grow on rocky hillsides and require decades to reach full maturity. Once harvested, the agaves are slowly roasted in traditional underground earthen pit ovens before being crushed using a horse-drawn tahona. Fermentation takes place naturally in cedar and pine wood vats using native wild yeasts, allowing the agave's distinctive terroir to develop. The fermented mash is then double distilled in traditional copper pot stills, preserving the rich botanical character and remarkable complexity that define Tepeztate mezcal.
