Process & Production:
Palomo Madrecuishe is produced from mature Madrecuishe agaves, a member of the Karwinskii family that can require well over a decade to reach maturity. Once harvested, the agaves are slowly roasted in traditional underground earthen pit ovens before being crushed with a horse-drawn tahona.
The cooked agave is naturally fermented in open wooden vats using ambient yeasts and then double distilled in traditional copper pot stills, preserving the elegant character and terroir of the agave while showcasing the craftsmanship of Carlos Méndez Blas.
