Parcels from La Poulette, the upper part of Hautes Bruyères, and Bois Roland. The grapes are harvested at optimal ripeness, destemmed, and macerated for a month in concrete vats, resulting in a concentration of black fruit and blackcurrant. The juice is extracted gently, leaving the tannins round and silky. The wine is naturally clarified by racking and bottled in June.
"Since our arrival in 2004, we have replanted just over 6 hectares with our massal selections to ensure a balance between human and economic well-being. Today, we have almost 12 hectares of vines: Chenin Blanc and a few ares of Chardonnay for white wines, Cabernet Franc, Gamay de Bouze, and Pinot Noir for red wines, and also Gamay Beaujolais for a small amount of rosé. The precision of our wines is simply the transparency of our agronomic work, carried out year after year in the vineyard. We shape our work in the vines and in the cellar according to the rhythms of the seasons and the lunar calendar, using organic and biodynamic farming methods."
