Process & Profile Produced in collaboration with the Rosales family at the legendary Tequila Cascahuín distillery, this expression comes from the La Mesa del Charco ranch located in El Arenal, Jalisco at an elevation of 1,469 meters. The agaves harvested for this release averaged an impressive 38% Brix, contributing exceptional richness and concentration to the final tequila. Lágrimas del Valle follows a "Vintage Rancho Único" philosophy, meaning each release comes from a single ranch harvested during a specific vintage year to intentionally highlight the distinct characteristics of that terroir. This approach mirrors traditional winemaking concepts where soil, elevation, climate, and farming practices influence flavor and aroma. The agaves are cooked in small steam-powered masonry ovens using Cascahuín's unique intermittent cooking method over four days, allowing deep flavor development. Fermentation takes place in open-air wooden tanks with agave fibers included, and the tequila is distilled before being bottled at 46% ABV — a proof chosen through extensive tasting panel evaluation.
