From Poli Distillerie of Schiavon, near Bassano del Grappa in the Veneto — the artisanal distillery founded in 1898 by Giobatta Poli, whose family roots in the area trace back to 1410. Today the fourth and fifth generations distill in small batches using both the ancient flowing-steam method and the more modern bain-marie pot still, in copper stills of their own design. Uvavina — "grape-vine" — is distilled from the pomace of withered grapes, following the Venetian appassimento tradition of air-drying fruit to concentrate its sugars and aromas before pressing.
