In August 2014, this rum was distilled in the Diamond Distillery's multi-column, Savalle still and put in used bourbon and whiskey barrels. It matured in the UK until it was shipped to the US for bottling in 2021.
Only 222 bottles of this single cask, seven-year-old Savalle rum were bottled as part of my Single Cask Strength Collection.
The molasses used at Demerara Distillers Ltd comes from Guyana and contained 65% dissolved sugar, one of the highest sugar contents of any molasses found in the Caribbean. The high sugar content is attributed to the age of the Guyanese sugar mill. Like most of the other stills at Diamond Estate, the Savalle still came from another estate during the consolidation of the rum industry in the last century. This multi-column still produces lighter-bodied rums that are generally blended with distillates from the other stills.
This still is made of copper and stainless steel with copper plates. By extracting alcohol-rich vapor from the various plates, the distiller can control the ultimate flavor of the condensate produced by this still.
