Terroir: Clay and silt soil, south-facing.
Viticulture: Organic. Guyau Val de Loire pruning.
Vinification: Hand harvested and carefully sorted in the vineyard. Pressed with whole clusters, ambient yeast fermentation. Aged 18 months on the fine lees in barrels (new and 1-2 year old oak). BECKY WASSERMAN
