Gimonnet-Gonet's L'Éclat Grand Cru Rosé is a blend of 93% Chardonnay and 7% Pinot Noir. Gimonnet-Gonet likes their rosé with a high percentage of Chardonnay; for them, it keeps the wine zesty, pure and racy. All grapes are hand-harvested and fermented in stainless steel tanks, the wines undergo full malolactic conversion, and are aged for 6 months in tank before undergoing 20 months of aging sur latte, then bottled with a dosage of 7 g/l. In the glass the wine shows a pale pink-salmon color with elegant bubbles with aromas of raspberries, peach, cherry, quince, almond & rose petals. On the palate, the texture of Chardonnay & fruitiness of Pinot Noir with fresh minerality & long persistence. Flavors of salted citrus, muddled raspberry, red currant and river stones wash across the palate into an elegant and refined finish.
