Winemaker Notes - Coda di Volpe (Fox’s tail) is a type of grape about which Plinius the Elder was talking about in his “Naturalis Historia”, with the name “Cauda Vulpium”. The name comes from the bunch of grapes, which when mature, looks like a fox’s tail. It tends to make open, charming wines with citrus and light tropical fruits, sweet spices, along with floral and herbal accents. Pairs with sushi, sashimi, and other fish dishes.
