The Seven Springs Vineyard was established in 1984 by Al Macdonald in Eola-Amity Hills. The vines are planted east-facing at 600ft elevation on rocky volcanic soils, and receive a Pacific influence through the Van Duzer Corridor. The vineyard is farmed biodynamically. The grapes are pressed 30% whole cluster and undergo native yeast fermentation. The wine is then aged for 11 months in 20% new French oak. It is then bottled unfined and unfiltered.
Aromatically the wine has notes of bramble, tart blackberry, cigar box, Asian spice, and black tea compliment a balanced tannin structure. This wine will age in a cellar for years to come. On the palate, there is a hint of riper fruit flavors, as well as restrained tannins that showcase just how cellar-worthy this bottle is.
