A one-off, this is from 0.8 hectares in Chatains and 0.71 hectares in Séchet. There’s a total of 5.5 barrels. This is classic Vaillons, with some delicate floral notes and plenty of restrained citrus fruit. Harvested at just 8hl/ha, it is unsurprisingly concentrated, but with a sense of reserve and austerity that should appeal to Chablis purists.
