History,
Dixeebe Tobala is produced by Valentin Cortes in Santiago Matatlan, Oaxaca. The maguey Tobala (Agave potatorum) used in this mezcal are cooked in an underground pit oven, milled by tahona, and double distilled in a copper still. Tobala was one of four Dixeebe mezcals released as part of the US launch in March 2022. Prior to arriving in the US, edition 1 was just 36 bottles and edition 2 was 90 bottles.
Tasting Notes,
Taste: Cherry cheesecake. Celery sticks.
Palate: Earthy, minerally, herbal, peppercorns, Papaya, Hickory, Slightly lactic.
