Their commitment to preserving the region’s indigenous varieties and terroir is evident in the COS Rami, a unique blend of Grecanico and Inzolia. These native Sicilian grapes are vinified with skin contact, giving the wine its distinctive amber hue and textured mouthfeel. Fermented and aged in concrete tanks, the Rami reflects the winery’s philosophy of letting the grapes and soil speak for themselves, resulting in a wine that is complex, with notes of stone fruits, Mediterranean herbs, and a vibrant minerality.
