A modern take on the traditions of Abruzzo, this classy Pecorino comes from mountain foothills near Pescara. It was fermented in a mix of terracotta amphorae and large, neutral French oak barrels, and fermented with local yeast. It was then aged in amphorae and very large, neutral Slavonian oak vats for around 2 years. Unfiltered.
If you like white Burgundy, try this charming central-Italian! Starting with a deliciously savory, toasted nut aroma, the wine gradually loosens up in the glass with fragrant hints like rose, fragrant herbs and lemon zest against freshly-toned stone fruit like nectarine. Rounded and generous on the palate, the firm acidity reins it in to an extended finish with a hint of unctuousness, balancing savory and fruity. Delicious, refreshing and structured! Try it with richer seafood or roasted chicken with herbs and lemon. Serve around 58F.
