We love white Burgundy and find Chablis to be especially compelling in the warmer months when the purest expression of Chardonnay is especially refreshing and delicious. We have been proudly carrying Charly Nicolle Chablis for years. This small producer is championed by a small importer and has been an insider secret at Hi-Time. We only recently received enough to feature in an email, but it is still quite limited.
Most of this wine stays in France and a significant portion that makes it into the U.S. finds its way onto the lists of fine restaurants. In Southern California, it is featured at Marche Moderne, The Drake and Nobu to mention a few.

The Premier Cru vineyard Mont de Mileu lies on the side of a hill that is protected from the North winds by woods. This vineyard is sun-drenched from morning to night due to its south and southeast exposition and moderate, regular slopes. Facing the valley of the Serein, Mont de Milieu is a vineyard which is able to consistently produce perfectly ripened fruit while maintaining its freshness.
The famous chalky Kimmeridgian soils are deep and well drained. This is the ultimate expression of a successful partnership between soil and climate resulting in powerful wines that are complex and balanced.
They offer everything you could want, exhibiting signature characteristics of chardonnay from this region. These are the perfect wines to pair with oysters, shellfish, seafood or poultry or to refresh as we move into the warmer time of the year.
Charly and his wife, Lucie grew up in the same small village where they make wine today. The employ the same traditional farming and winemaking as the generations before them. The grapes are hand harvested, fermented with native yeast and aged for 12 months on the lees in stainless steel. This allows them to maintain freshness with no oak influence. This approach highlights the purity of the Chardonnay with these wines exuding finesse, purity and freshness.
This is a textbook example of what a quality Premier Cru Chablis should taste like and white Burgundy doesn't get much better at this price point.
