ORGANIC/CERTIFIED BIODYNAMIC SINCE 2020
Located in Savigny-lès-Beaune, the Camp-Atthalin estate has five hectares of vines managed with care, according to organic and biodynamic principles certified since 2020. Here he offers us this Hautes-Côtes-de-Beaune red Le Mont Battois made from Pinot Noir located on a plateau overlooking Beaune, at an altitude of about 350 meters. The latter, exposed to the east and south-east, flourishes in soils composed of limestone, pebbles and clay. Once in the winery, the grapes are destemmed before vinification in stainless steel tanks. The indigenous yeasts initiate the fermentations and the macerations are not desired to be too extensive. They are said to be of the "infusion" type thanks to a small pump-over and the absence of punching down. Finally, the wine is aged in barrels for a year. The tasting reveals a tasty and aromatic wine that presents a beautiful fruit in a round and frank spirit.
