PAYSAN CHARDONNAY
Owner/winemaker Ian Brand makes single vineyard, old vine bottles from some of California's most exceptional and historic vineyards. And in addition, he makes "village" inspired wines from the Central Coast that over-deliver for their respective price points.
This blend is predominantly sourced from a few vineyards at the base of Jacks' Hill on the eastern side of the Salinas Valley as close to the ocean as grapes can reliably be grown. They are planted in the orange, iron oxide granodiorite that dominates the region. Half the blend is from a 40 year old windswept vineyard that the winery thinks is Wente clone. Picked at low brix and high acid, pressed to tank, cold setled 24 hrs. The younger vines are cold fermented in tanks with arrested secondary fermentation and aged mostly in concrete. The older vines are barrel and puncheon fermented, go through malolactic fermentation and are aged on lees in the same vessels. Racked and blended after 7 months and committed to bottle.

SUMMERS CABERNET
Jim Summers' passion for wine began later in life after moving to California to pursue his MBA. During his banking career, he fell in love with Napa and Sonoma. In 1987, he bought a 28-acre vineyard in Knight's Valley and, with his wife Beth's support, produced the first Summers Ranch Reserve Merlot in 1992. The Summers family subsequently purchased a winery and vineyard in Calistoga, and this became the hub of Summers Estates Wines.
A medium- to full-bodied Cabernet with a deep plum color, rich texture, and notes of black currant, cedar and spice. Laced with plums, espresso, dark cherries, a hint of wood spice and subtle floral notes rounding out the finish. This wine speaks to their standards of winemaking excellence and we hope that you'll cherish it with your family as we do with ours!
