Blend: 85% Assyrtiko 15% Aidani
Grown on volcanic soil, this wine is grown from young Assyrtiko vines with an average age of 50 years old, in the lower elevation areas of Santorini, combined with young Aidani grapes.
Vinifcation is done in stainless steel at low temperatures to bring out the fruity side of Assyrtiko. Each variety is vinified separately and the final blend depends on the vintage. The wine ages on its lees for six months.
Description Notes of melon, pear and citrus fruit, combined with herbal hints and evident minerality. Fresh mouth, balanced acidity, long finish. Best served Serve chilled. Pairs well with fried fish and shell fish.
