Akabu Hisui (a.k.a.: Jade). This a light and refreshing sake with lower alcohol (13%) than most sakes, and with a citrusy, grapefruity, green melon and an exotic tropical note (like lychee). This is milled to 50% of the original rice grain, so technically it is a Daiginjo. Akabu is an artisanal sake producer, founded in 1896 in the coastal town of Otsuchi, the original facility was completely destroyed by the 2011 Tohoku earthquake and tsunami. In 2013, they built a new facility nicknamed the "Resurrection Brewery" (Fukkou-kura) inland in Morioka City
