Volans Anejo Tequila is produced at the legendary tequila distillery El Pandillo by Tequila mastermind Felipe Camarena, this limited Anejo Tequila is a testament to craft Tequila.

In order for an Anejo Tequila to be of quality, the Blanco Tequila that ages and transforms into an Anejo Tequila must be of high quality as well. The base Tequila for Volans Anejo is a blend of three different additive-free Tequilas: one made with deep well water, one with spring water, and one with rainwater.

All three of these Tequilas are slowly cooked in stone and brick ovens in which the steady heat caramelizes the sugars in the agaves to give a sweet and deep base for the fermentation. Then, the cooked agaves are gently crushed using a mechanical tahona created and engineered by Felipe.

Fermentation of the agave then takes place in open-air stainless-steel tanks using both ambient and a proprietary yeast, capturing the essence of the highlands and the surrounding environment around the distillery. The fermented product is then double distilled in copper pot-stills which results in a clean, bright, transparent, smooth Tequila.

The three Tequilas are then carefully blended and introduced to hand-selected barrels. This Anejo is a beautifully layered expression shaped by a thoughtful mix of barrels: Tennessee whiskey and bourbon casks bring rich notes of vanilla, caramel, baking spice, and toasted oak, while a touch of California wine barrels aged in French oak adds subtle dried fruit, soft red berry nuance, and refined structure. With American oak providing warmth and roundness, and smaller portions of French and German oak lending elegance, spice, and complexity, the result is a polished, expressive Anejo that stays true to the agave while delivering remarkable depth and finesse.

The Volans Anejo Tequila is a beautifully composed Anejo that shows both richness and precision, with aromas of cooked agave, caramel, vanilla bean and toasted oak that lead into layers of butterscotch, baking spices, dried orange peel and cocoa. The palate is supple and expansive, yet remains focused, revealing notes of cinnamon, roasted nuts, dried fruits and a touch of earthy minerality that keeps the sweetness in check.

There is excellent balance here, with the oak lending depth and texture without overwhelming the agave, which still shines through at the core. Long, polished and complex, this is an elegantly made Anejo with plenty of appeal out of the bottle, but enough structure and poise to keep you coming back to the glass.
