The term Capón refers to the practice of cutting the quiote (the flowering stalk) and allowing the agave to remain in the field for an additional year or more. Produced using the Ancestral Method, this spirit honors the ancient ways of mezcal making: roasted in earthen pits, crushed by hand or stone, fermented with wild yeasts in open vats, and distilled in traditional clay pots.
