A 100% Mexican brand native to the state of Chiapas, born to gather and expose a small part of the great cultural wealth found in its roots. Pox (pronounced "posh") is a traditional Mayan ceremonial spirit of major importance in Mayan culture — in the Tzotzil language, "Pox" means "medicine" or "cure" and is considered an all-natural remedy. Produced in San Juan Chamula, Chiapas, where the tradition of drinking Pox is kept alive thanks to its distinctive flavor and meaning, Siglo Cero rescues the original recipe used for centuries.

Ingredients: Four heirloom corn varieties (white 12%, red 12%, yellow 10%, black 10%) sustainably sourced from local Mayan farmers, wheat bran (28%), cane sugar (20%), and piloncillo (8%).

Production: Sugarcane is crushed and juiced; a portion is boiled into piloncillo. The four corn varieties are dried, husked, and milled, then combined with wheat bran, local spring water, piloncillo, and fresh cane juice in wooden fermenters (tinas). Natural spontaneous fermentation runs 10-18 days, followed by double distillation in traditional wood-fired copper pot stills.

Nose: Savory and creamy with sweet corn, chocolate, and gentle coffee aromas.

Palate: Notes of ancho and guajillo chiles, esquites (Mexican street corn), dried coconut, and baked corn husk — gently sweet with spice and funky notes.

Finish: Long and complex with subtle sweetness.

Traditional Serve: Served with coffee beans — chew a bean, then sip immediately for an explosion of flavors.
