WINE ADVOCATE - 93 POINTS With a drawing of an oak barrel on the front label, the 2023 Santorini Assyrtiko Barrel reveals a softly textured mouthfeel with fleshed-out aromas of preserved lemon, white currant and waxy lemon leaf. The wine matures in lightly toasted barrels (two and three years old) for up to six months. Malolactic fermentation is not used on any of these white wines, not even partial. Ultimately, the wine is characterized by elegant mineral tones that work beautifully alongside the soft fruit flavors. Drink date: 2025-2035.

Paris Sigalas founded the estate with a partner in 1991 and built the existing winery just outside of Oia in 1998. It counts about 40 hectares of vineyards between estate and leased vineyards and has an average annual production of 200,000 bottles. Stellios Boutaris is CEO and chairman of the board today. Organic. 100% Assyrtiko from vines with an average age of 60 years. The soil is composed of sand, black lava, volcanic ash and pumice and is poor in organic substances and nitrogen, with minimal clay. The wine is fermented in temperature-controlled stainless steel tanks. Winery notes: This very crisp dry white is straw blonde color with light shades of green. On the nose you find subtle hints of citrus fruit. Excellent structure with a depth of flavor and high acidity, which brings the flavors to the front and adds freshness, with a lasting after-taste. Has the characteristic minerality of a world class Assyrtiko.
Sigalas has been a pioneer in the organic viticulture and has participated in a government organic farming methods program since 1994. Paris Sigalas remains committed to the founding principles of Domaine Sigalas - a creative relationship with the tradition, the Santorini Vineyards as well as the use of the best in winemaking technology and experience.
