History,
Salvadores Cirial is produced by Flavio Pérez Méndez and his family. This mezcal is traditionally produced in Tlacolula de Matamoros. The agaves are cooked in an underground pit oven, milled by tahona, fermented with open air yeasts, and double distilled in copper stills.
Tasting Notes
Nose: Balanced damp soil and floral sweetness. Lingering mushroom scent.
Palate: Coats very well. Rose water. Powdered sugar. An interesting blip of lean meatiness in the middle, reminiscent of plain turkey jerky.
