PRACTICING ORGANIC FARMING
This Cannonau (which evolved from Spain's Garnacha) comes from the west coast of Sardinia, and it's a far cry from the richer Cannonaus (or Garnachas for that matter) that can readily be found. From sandy-clayey soils, given only a brief maceration of skins, and aged only 4 months in stainless steel, its classically pale ruby color is in step with its elegant, lifted and clean character. It's red fruited (cherry, strawberry), with herbal hints (camphorous or mentholated), and subtle spice notes (like white pepper & anise). Try it a cool 58F.
