Small batch unaged corn whisky produced by Prieto y Prieta in Oaxaca, Mexico Maestra Destiladora Idalia Araceli Orocio Distilled from co-fermented 100% Oaxacan heirloom and native corn varieties; exact blend may vary batch to batch (the first batch is composed of 50% purple corn, 30% yellow corn, and 20% white corn) Corn sourced from both the “seasonal” rain-fed harvest in December/January and the irrigated harvest in July/August Corn is milled using a mechanical hammer mill Water is sourced from a well on-site and filtered through tezontle (porous volcanic rock) to enhance its mineral character Fermented for 5–6 days in open-air wooden vats (tinas) using well water (85%), vinasse from previous distillations (15%), enzymes, and pitched yeast Distilled once using a traditional copper pot still with condenser (refrescadera) Rested in stainless steel for 2 months The nose is enchantingly expressive, opening with petrichor, green papaya, apple blossoms, corn silk, roasted corn, and huitlacoche. The palate is round and waxy, packed with notes of piloncillo and sorghum, chocolate mint, marigold, and fresh and roasted orchard fruits plus a hint of BBQ sauce. The finish is long, sustained by prickles of green peppercorn spice. Non-chill filtered; 47% ABV Prieto y Prieta Moonshine deftly celebrates the vibrance and enchanting variability of Oaxacan maize. Transforming corn through fermentation is at the heart of Mexican identity and indigenous culture (6,000 years of recorded history confirm this); distilling fermented corn into whiskey, a relatively recent development, captures these flavors in a distinct story.
