Tsitska has a light straw hue and a fragrant blend of citrusy lemon and black tea. On the palate are notes of green apple, melon, and lime as well as pear, and quince, all supported by bright and lively acidity.
Pheasant's Tears uses vineyards in the Imereti region, where the grape has flourished for ages on high, rocky terrain, to make its Tsitska from this ancient western Georgian varietal. Compared to other Georgian orange wines, the 2023 vintage was macerated for a shorter period of time—just three days on skins after destemming—before fermentation and maturing in stainless steel tanks. Tsitska's distinctive high acidity and fragrant delicacy are maintained by this little intervention strategy. In keeping with the winery's dedication to natural winemaking, the wine is bottled unfined, unfiltered, and with little to no sulfur added, highlighting the natural freshness and energy of this late-ripening variety.
