One of the leading German Sparkling Riesling producers is Peter Lauer, from the Saar, the coolest part of the Mosel. This is a Riesling producer that purists should know. Lauer's most recent Sekt (Germany's answer to Champagne) is made in the Champenoise or methode traditionnelle manner. Medium-bodied, with delicate, fine bubbles with effusive notes of orange peel, quince, honey, and a little smokiness. All riddling is done by hand, followed by a maturation period of 36 months in cool cellars before disgorgment.
