This is sauvignon blanc from Verdigny and Chavignol off Caillottes, Silex, and Kimmeridgian soils. The wine is carefully hand-harvested before natural fermentation. No sulphur is added during vinification. The wine ages 8-10 months in stainless steel and 5% in new barrels. It is fined with bentonite but not filtered. A stunning village Sancerre!
