A masterful blend of Xarel·lo, Chardonnay, and Pinot Noir grapes from the biodynamically farmed Finca Les Torres Vineyard which is situated in the temperate Penedes Superior district at an elevation of 2,150 to 2,260 feet. Winemaking: Alcoholic fermentation of the Xarel·lo and Chardonnay in stainless steel tanks at 16° C and the Pinot Noir in new French oak barrels for 16 days. Second fermentation in bottle following the traditional Champagne Method with a minimum of 30 months aging on the yeast.
