The brewery was opened in 2018 by Andrew Cenofante, their Toji.(Head Sake Brewer), who learned the art of sake brewing firsthand during his time working at Daimon Shuzo. The single-origin rice used here is from Isbell Farms in Arkansas. Isbell Farms is becoming well-known within the domestic Sake market for the quality of their rice, and is being used by other Sake breweries in the US.
