Mathieu Apffel began his winemaking journey by partnering with Mathieu Goury (winemaker at the current Domaine Chevillard) between 2013 and 2015. He established his own estate with his partner Camille in 2016. Their estate is located in Saint-Baldoph, between Chambéry and Apremont. It comprises 8 hectares of Jacquère and Altesse grapes, cultivated organically. The wines, declared as Vin de Savoie or sometimes Vin de France, are vinified with great skill and sensitivity. Vinification is carried out without added yeast and with virtually no added SO2. A pure Jacquère from the Apremont terroir at the foot of the Chartreuse mountains, grown on sedimentary clay-limestone soil. High salinity and minerality give structure and energy to this versatile grape variety.
