The Demets family is based in Gyé-sur-Seine in the heart of a historic village on the Côte des Bar. Three generations of Demets have operated the winery with the same passion for showcasing their clay-limestone soils and other elements of their sunny terroir. The Extra Brut Tradition Blanc de Noirs is signature cuvée of the domain and it is fashioned exclusively from Pinot Noir grapes grown in all the different communes farmed by the family. With just a slight hint of salmon color the result is an exceedingly fresh Blanc de Noirs that strikes a pleasing mid-point between gastronomy and finesse. It was vinified and latter aged for 8 months in stainless steel vats. After bottling it was rested for 13 months on the lees before being finished with minimal dosage of 1.g/L.
