A blend of 65% Chenin blanc, 23% Muscat Blanc, and 12% Vermentino, all from organically-farmed vineyards. Aged in neutral oak for 4.5-5 months (depending on the cuvée), except the Chenin–65% of which was aged in concrete egg. Native fermentation, no fining, no filtration, no other modifications or additions except 35 ppm of sulfur dioxide to the assembled blend the week before bottling. Additionally, the Skin Fermented Chenin (23% of the final blend) received 15 ppm of sulfur dioxide in September 2024 when freshly barreled.
