Los Javis Tepeztate is made with agave Tepeztate in Santiago Matatlan, Oaxaca. The agave used to make this mezcal were roasted in an underground oven, crushed by horse drawn tahona, fermented with open air yeasts, and double distilled in a copper pot still.
Tasting Notes:
Nose: Truffles, olives, nuts and hay.
Palate: Thyme and orange peel give it a clean start, the serrano chiles and chestnuts develop it into a spicy and smokey finish.
