WINE ADVOCATE 95 POINTS A Chablis-styled sake but with Grand Cru quality, the NV Katsuyama Akatsuki Junmai Daiginjo has knock-out minerality that feels just like climbing a stony mountain. It has great complexity, providing scents of flint, earth, jam, citrus and peach. This sake is off-dry and perfectly balanced with refreshing acidity, together with big structure and deep concentration. It has a prolonged meaty, spicy and mineral finish. A fabulous sake!
Rice: Yamada Nishiki.
Alcohol: 16%.
Prefecture: Akita
Polishing rate: 35%
Brewery notes: A remarkable sake from Katsuyama brewery in Akita prefecture. Akatsuki Junmai Daiginjo is a “centrifuge” sake, meaning the mash is separated from the sake using an expensive, space age centrifuge machine. This sake is amazingly complex and comes with many tantalizing opportunities for pairing with Kaiseki and western cuisines.
