This unique rose (the winery views it as a Blancs de Noirs) is fashioned with a very brief Pinot Noir skin maceration, a technique that yields in a pale "eye of the partridge" color that is reminiscent of the hue of early twentieth century Champagnes. This Vesselle is much more than an historic homage, it is rather it a wonderfully versatile gastronomic Champagne that combines the signature power of Bouzy with the fine elegance of contemporary Champagnes. Quite frothy in the glass with effusive aromas of red berries, mint and white flowers. It's medium-bodied with a nice texture that is balanced with a racy acidity that drives waves of citrus, cherry and red apple flavors which are followed by appealing woodsy and chalk inflections in the finish. We strongly suggest that you compare this long-time staff favorite to any of the Big-Name brut rose Champagnes and see if it doesn't become your new "go to".
WINERY NOTES: Grape variety: 100% Pinot Noir. Aging: Minimum 2-3 years. Dosage: Between 5 and 7 grams of sugar per liter (Brut).
This champagne is named for its slightly amber color. This color is obtained during the pressing of the Pinot Noir grapes and will retain this hue throughout the vinification process. It is a Blanc de Noirs made in the traditional style, just as our ancestors produced it. Its powerful nose is very fruity. Its palate is refined, vinous, with great persistence. It is "the House's Child"... It is charming with its color, surprising with the delicacy of its aromas... To taste it is to love it!"
JEB DUNNUCK 94 POINTS - "A clear pale pink/salmon color, the NV Champagne Oeil De Perdrix Brut leans into its pretty fruit and delicacy on the palate, with fresh notes of wet stones, dewy spring earth, fresh peaches, strawberries, orange blossoms, and pastry dough. Medium-bodied, it expands on the palate, with a frothy, lively mousse, and it’s energetic underneath, with a mouthwatering and dry finish. It’s very versatile for the table but also delightful on its own. I would love it with Chaouerce. Drink 2025-2040."
