ORGANIC
This is a blend of two parcels within En Remilly. The principal parcel is high-elevation, located just above Chevalier-Montrachet, and imparts a silex/smoky style, together with full fruit ripeness. The 2.02 hectares of vines here were planted by Hubert Lamy in 1989. This is very hard limestone, with almost no soil. As Olivier said, you need to be very precise with picking here as the maturity increases rapidly at the end of the season. A fabulous nose which recalls the grands crus of Puligny — fine white peach and very gentle matchstick reduction, with a hint of honeysuckle. On the taut and energic palate, zesty lime rind and waxy lemon. What a wine.
